Guac Mayo

I literally just whipped this up and didn't take any fancy photos and ate it with crackers and sandwich meat because our bread was moldy; but that is all beside the point because this Guac Mayo is Amazing!!

I have recently gotten into Penzeys Spices and this was a recipe in their newest catalog. Avocados have really grown on me this year and I thought this sounded delicious! 



So Here is What You Need:
  • 1/3 Cup mayonnaise (light works fine)
  • 1 large avocado, peeled, pitted and cut in chunks
  • 1 TB. freshly-squeezed lime juice (juice of 1/2 lime) {Mine wasn't fresh just the bottle stuff will work}
  • 1 clove garlic (or 1/4 tsp. PENZEYS MINCED GARLIC)
  • 1/4 Cup chopped fresh cilantro, use more or less or none to taste {I used dried Penzeys cilantro}
  • 1/4-1/2 tsp. salt, to taste
  • 1/4 -1/2tsp. GROUND CUMIN, to taste {I used Penzeys Chile Powder}
  • {I also added about 1/4 tsp. of Penzeys Mural of Flavor because that stuff is good on anything}

That is it -- I just mashed the avocado with a fork and mixed it all together. If you want it creamier you could always put it in the food processor or blender for more blended mayo. 

I can't wait to try this on bread or even with a burger!!

Mini Vaca to the South...

Wow time sure does fly; it has already been one month since the hubby and I took a mini vacation South ... Well not too far South but a round trip of about 1000 miles to the Black Hills in South Dakota. We hadn't been on a vacation {just the two of us} since we were married and decided we needed a little getaway! 

We wanted to camp while we were down there, we did some looking online and found a campsite very close to Sylvan Lake. Sylvan was one of our favorite places when we went to South Dakota in 2008 and we thought it would be nice to stay somewhere nearby the lake. The camping area was nice and had some convenient amenities but we decided next time we might try to find our own spot, somewhere more secluded without bathrooms and laundry; to us camping is more along the lines of roughin' it!! 


We have been to the Black Hills a handful of times separate and the one time {in '08} together and Steven had never golfed down there so this time we found a very nice golf course and I had a wonderful time riding along taking pictures while he golfed. The course and the scenery was amazing and I'm really glad we added this event to our To Do list.




Overall the trip was a successful one, we visited Crazy Horse and Sylvan Lake, did a wine tasting {I hardly had to twist the hubby's arm either}, got 2 pounds of fudge at the candy store {someone has a sweet tooth} and relaxed by the bonfire. I had a wonderful time having some 1 on 1 time with my husband; plus he makes a killer breakfast and even better s'mores!!

The Little Things

Are you ready for an update on The Little Things? Well ready or not here comes a quick update on what I've been up to lately.





1. The 4th of July was spent at my husband's grandparents cabin on the river - the day was complete with way too much food and an amazing fireworks display
2. The 5th we headed to my parent's lake home in Minnesota - it has become a tradition to spend the weekend after or before the 4th there with our friends. {Don't you love the shirts I had made "Time To Get Star Spangled Hammered"}
3. We got home from the lake and went to check cows. It was a beautiful evening and always fun to see the cattle so excited for their treats. {For those unfamiliar with farm life our cattle are separated into grass pastures with their babies; there are also bulls in the pastures and all the cows are pregnant again. The cattle will be moved back to the farm around November-January.} >> Video
4. Playing horses :: Last night I watched our nieces and wow can they wear a person out!! I also forgot how much work it is to jump on a trampoline. >> Video

I've been feeling very blessed this last week being surrounded by lots of friends and family. Don't forget to appreciate The Little Things in your life!

Tomorrow morning I'm heading to the Twin Cities with my sister to stay with our cousin and his wife. We have an eventful weekend planned ending with The Color Run. I'm so excited and haven't trained for the 5k at all so that should be awesome!!

Engaged or Enraged...


When I first saw this linkup on Stevie's Blog {no not my Stevie} I thought it sounded fun, so now I get to think back and remember planning one of the best days of my life. 

Engaged or Enraged:

1. What was the funniest moment you had while planning your wedding?
Funniest Moment, Wow I don't really remember any stand out funny moments. Maybe realizing how many wino friends I have or how many people would drink wine just to give us the corks.

2. What is your favorite thing about your husband?
I have so many favorite things about Steven. I admire his hard work ethic and his love for the crops he grows and the cattle he cares for...farmers really are amazing! Also I love the way he loves me, I'm very public and am kinda addicted to social media and expressing myself through photos; Steve, on the other hand, is very private and I'm okay with that because his love and affection is just for me and that makes it more special.

3. What was the most stressful part of planning a wedding? 
I let all the little details get the best of me. Stuff at the wedding or reception that no one else was going to notice but me. Steven had to remind me on more than one occasion that the wedding isn't about all the 'stuff', what will matter in the end is that before our family, friends and God we made a commitment to each other that will last the rest of our lives

4. What is your favorite personal detail from your wedding?
Oh I had a lot of details that I loved to make our wedding all our own. First what did people do before pinterest?! They had to be crafty all on their own haha 
If you are new to the blog or just catching on, I love wine, so wine corks and bottles were a big part of the decor. I also wanted to tie in a Steve aspect with the decor so we had wheat decorations also.  One of my other favorites was the shadow box we used for our sand ceremony!
All my details couldn't have been possible though without my amazing Sister, I'm honestly feeling a little sorry for anyone who didn't have someone like her to take over the decorating and details!!

5. What was your favorite part about planning a wedding?
Getting to play around with professional photos taken of the two of us and not photos I had taken! I knew one aspect of the wedding we were going to splurge on was the photographer and I haven't regretted it once. Those photos are one of the things that will last when the memories begin to fade!

6. What would your husband say is his favorite thing about you?
I hope he would say the way I love him and all the little things I do to make him feel special {like buying him TONS of double stuffed Oreos} or being an awesome Wife and surprising him with a brand new set of golf clubs for our wedding present!

*Let Freedom Ring*

I owe today {and Every day} to all those brave men and women who have played their part in making my home the 'Land Of The Free'!

Happy Birthday America! 

I hope everyone has a safe Independence Day. I will be spending this long weekend surrounded by some great friends and family {& cold beverages & sunshine & water}, counting my blessings and hailing the Red, White & Blue!!
